This is really easy, tastes good and needs no weighing - possibly suitable for making in the van? No oven? a double skillet should do the job. Yogurt cakeHeat the oven to 170C or 325F Lightly grease 2lb loaf tin (you could skip that in a double skillet!) Place 150g pot of plain yogurt in a bowl Clean the pot (I don't bother) and add 3 pots of SR flour 2 pots caster sugar I pot vegetable oil 3 eggs 1 tsp almond essence Mix well together, pour into the tin and bake for 1.5 hrs until well risen. Cool in the tin and serve spread with butter. PS to Pauline - put this on the website if you think that it is suitable.

That could well work in the skillet with the diffuser thing on the gas. I'll give it a try! and yes, can definitely go on the website - if it works!!

As the expert cake tester around here, I can support that statement ;D. Although I had to have a few pieces to be sure!

I made the cake in the van while at the meet at Devizes. I used the double skillet on a single electric hotplate on quite a low setting. It took about 2 hours to cook and then I browned the top under the grill. I don't think that anyone has been ill as a result of eating it!

Well we lived to tell the tale! It was really nice and although I probably wouldn't make it in the van due to the time, it's a nice cake to do at home.

Mike, I wouldn't have taken the ingredients with me if I hadn't intended to do it, but your comments spurred me on!

Funny there is a cake recipe in the Autosleeper Owners Club magazine this month. It is the recipe you cook for the ASOC National Rally at Newark (we forgot to book) but dont know what it is like but presumably easy enough to cook in a van.
Mincemeat cake 5oz soft marg 5oz castor sugar 8oz SR flour 2 eggs 3oz currabts 1 x 1lb jar mincemeat 1oz flaked almond
Put all ingredients except almonds in bowl and beat for 1 minute until blended. Put into 8 inch round lined cake tin, smooth top. arrange almonds on top. Bake for approx 1 hr 30mins at 160c or gas no 3 (presumably for motorhome ovens)
As I mentioned I haven't tried it but seems easy enough.

How many people take scales in their vans to weigh out the ingredients? I agree that it does sound nice and will probably try it sometime at home, but not in the van. Too nerve-wracking doing it on the hob and too expensive in time and gas in the oven.

I actually have brought some micro scales for the van £3 but I have also purchased a measuring jug from Lidl's which allows you to measure flour etc, £1.99 so I have brought that as it is dual purpose.

Thank you everyone for your kind comments, but as I said before I don't think that I will be making cake in the van again. At Devizes the length of cooking time encroached on our drinking time in the pub When camping I can think of many better uses for my time and to have the gas oven on for 1-2 hours for a cake seems very wasteful.
